POACHED EGGS WITH FETA AND SPINACH



EGGS
(Serves 1)

2 organic eggs
1 chunk feta
2 handfuls spinach
6 cherry tomatoes
4 spring onions
chilli flakes
ground black pepper
1 piece seeded wholemeal toast

Initially I wanted to bake this dish in the oven but unfortunately we didn't (until this afternoon) have an appropriate sized dish to do so. This being the case, I wilted some spinach, spring onions and chopped cherry tomatoes in a saucepan with coconut oil whilst poaching two eggs in my other pan, before popping in a bit of toast to go on the side and sprinkling some feta over the top.

*I really need to stop incorporating toast into my breakfasts but I'll tackle that task another morning.

HEALTHY WINTER WARMER #1: CHIA SEED AND SAUSAGE CASSEROLE


CASSEROLE 
(Serves 5)

1 pack of Heck sausages
1 red pepper
1 yellow pepper
1 large sweet pink onion
1 large brown onion
1 handful mushrooms
2 flat tbsp chia seeds 
700ml veg/chicken stock
1-2 big squeeze tomato puree
1 heaped tsp chilli puree
1 heaped tsp garlic puree
salt + pepper

SIDE
1/3 pack of white & black quinoa

I originally thought I was being a super healthy bean and had bought chicken italia sausages from Heck but in fact they were your standard Heck porkmeisters - of which I was quite pleased with in the end as they are delicious and give this dish a real winter warmer feel which is what you want in the colder months.

Wilt your onions and mushrooms down a little in a pan with some coconut oil before putting them aside in your ovenproof casserole dish. Fry or grill the sausages for 10-15 minutes turning them as you go so they're evenly cooked and add them to the casserole dish too along with chopped peppers, stock, tomato puree and all the other bits including your chia seeds to thicken the stock up.

Bake everything in the oven for 45 minutes to an hour and serve with a side of quinoa or brown rice if you fancy something more filling for your post-workout carb refuel meal.

SUPER SPEEDY BREAKFAST


This is definitely not the prettiest of breakfasts - if I wasn't taking it to work I might put it in a cocktail glass because I'm fancy like that (I'm not) but alas, tup life prevails. 

WHAT YOU'LL NEED

strawberries halved
blueberries
2 heaped tbsp natural yoghurt
1tsp chia seeds
dorset nutty muesli
sun dried goji berries

Simples.

BLUEBERRY OAT ON-THE-GO BREAKFAST SMOOTHIE



This is my new go-to breakfast for the weekday mornings at my new job because it's easy to prep the night before and can either be blended and left in the fridge or quickly blitzed in the morning before leaving the house! 

SMOOTHIE

1/2 cup oats
1 cup unsweetened coconut milk
1/2 cup blueberries
1 banana
1tbsp greek yoghurt
2tbsp honey
1tsp maca powder
1/4 cup walnuts | ice cubes

FRESH STRAWBERRIES ON TOAST


This is a super speedy breakfast if you're in a rush for work in the morning - inspired by my aunty who made something similar for me when I lived in Spain earlier this year.

FRUIT TOAST

1 piece seeded wholemeal toast
sliced strawberries
1tsp coconut oil
1tsp black chia seeds

I substituted butter for coconut oil to get in some healthy fats. Enjoy!

FILLING PEANUT BUTTER BREAKFAST SMOOTHIE



I'm constantly trying to find the perfect breakfast smoothie that keeps me going until lunch and also gives me that little bit of sweetness that I crave oh so regularly. This recipe is actually amazing (although I'm not entirely sure this is 100% what I put into it) and was really filling thanks to the banana overload. I'm desperately trying to get out of the toast and marmalade phase that I seem to be going through at the moment and this is definitely a start! 

SMOOTHIE

2 ripe frozen bananas
almond milk
dash of water
1 heaped tbsp organic peanut butter
1 heaped tsp cacao powder
1tsp maca powder
1 heaped tbsp oats

If anyone has any divine breakfast smoothie recipes feel free to pass them my way ;)

HEALTHY CHINESE FAKEAWAY SESAME CHICKEN WITH BROCCOLI


SAUCE

2tbsp low salt soy sauce
2tbsp sesame seeds
5 heaped tbsp honey
1tsp squeeze diced chilli 

BATTER

2 beaten egg whites
1tbsp cornflour
1heaped tbsp buckwheat flour
pepper

THE REST

200g chicken cubed
3 spring onions chopped 
Steamed broccoli
1 pack uncle ben's basmati/brown rice 

This recipe makes about two portions so you've done a bit of meal prep for tomorrow's lunch/dinner which is always fab. It's really simple and quick to throw together if you're in a hurry - just whisk the batter mixture together and coat the chicken in it, fry it in a pan with the spring onions and a little olive oil until golden brown. To finish it off, add the sauce mixture and the steamed broccoli to the pan, turning up the heat to get it to 'caramelise' and serve with the rice. Goodbye greasy Chinese takeaway.
